I have a confession to make. I love creating new recipes (as you can see it’s something I do often), but I seriously dislike writing about them. As in, what you’re reading right now–and all of the stuff that comes before the actual recipe.
I mean, I get it. As a food blogger you kind of have to write about, it’s just a given. But rarely will I have an entire article’s worth of things to say about something I cook. I’m more concerned about getting down to business!
So I will keep this short and sweet…
Hands down, you’re gonna love these fun little treats. I never grew out of eating cookie dough straight from the bowl–I dare to say it’s even better than the cookie itself! Am I right?!
Here’s something you don’t have to feel bad about…
My Guiltless Cookie Dough Bites are the perfect paleo treat to store in your freezer for whenever you have a sweet tooth. I’m obsessed because they’re no-bake, only 6 ingreds, gluten-free, dairy-free, grain-free, full of healthy fats and no added sugar! Ah-mazing.
Trust me when I say your friends will love you for bringing healthy treats to the party!
Coconut flour is perfect for this. If you’ve ever used it before, you’ve probably noticed that it’s super dense and therefore can be difficult to bake with. When creating my Paleo Pumpkin Chocolate Chip Muffins, after a few trials, it occurred to me that coconut flour has the perfect consistency for cookie dough because it’s so moist and has a mildly sweet taste. No baking necessary!
There’s some room for variation with the nut butter you use. For the most cookie-like taste, I recommend almond or cashew butter. However, I used sunflower seed butter for my last batch and it has the most wonderful nutty flavor–highly recommend trying! You could also use peanut butter for a classic PB and chocolate combo, but peanut butter isn’t my favorite health pick for a few reasons.
You can also use mini dark chocolate chips instead of regular. Because, minis make everything just a lil bit cuter!
These are perfect for a sweet treat, a protein-infused snack or yes, even breakfast. 😜
Guiltless Cookie Dough Bites
1 1/2 cups coconut flour
1/2 cup coconut oil, melted
1/2 cup coconut milk (full-fat, canned)
1/2 cup maple syrup
1/3 cup nut butter (I recommend almond, cashew or sunflower seed)
1 cup dark chocolate chips
Optional: pinch of cinnamon
- In a large mixing bowl, combine all ingredients except chocolate chips. Use a whisk or spoon to mix together until you get a dough-like consistency.
- Fold in chocolate chips.
- Use your hands or a melon scoop to mold into bite-sized balls.
- Freeze for 30+ minutes before serving. Store in freezer.
